Avocado and Mango Salsa with Crispy Prosciutto

Ingredients
- 1/2 avocado, cut into 1cm cubes
- 1/2 small mango, cut into 1cm cubes
- 1/2 small red chilli, finely chopped
- 1 tablespoon chopped coriander
- 2 tablespoons lime juice
- 2 slices prosciutto
Method
Place avocado, mango, chilli, coriander and lime juice in a bowl and mix well to combine.
Add prosciutto to hot, lightly oiled frying pan and cook until crispy.
Serve the prosciutto with the salsa.
Variation
- Replace the prosciutto with ham or bacon
