Avocado and Mango Salsa with Crispy Pancetta

Ingredients

  • 1/2 avocado, cut into 1cm cubes
  • 1/2 small mango, cut into 1cm cubes
  • 1/2 small red chilli, finely chopped
  • 1 tablespoon chopped coriander
  • 2 tablespoons lime juice
  • 2 slices pancetta

Method

Place avocado, mango, chilli, coriander and lime juice in a bowl and mix well to combine.

Add pancetta to hot, lightly oiled frying pan and cook until crispy.

Serve the pancetta with the salsa.

Variation

  • Replace the pancetta with ham or bacon
