Baked Ricotta Cheesecake

Ingredients

  • 125g ricotta cheese
  • 1 tablespoon caster sugar
  • 1 teaspoon plain flour
  • 1 egg, lightly beaten
  • Pinch of cinnamon
  • 1/2 teaspoon finely grated orange zest
  • 1/4 teaspoon vanilla extract

Method

Preheat oven to 150°C. Lightly grease small (200ml) ovenproof dish.

Place the ricotta cheese in a small mixing bowl and mix until smooth. Add caster sugar and flour and mix until well combined. Stir in egg. Add cinnamon, orange zest and vanilla extract and mix well.

Pour into prepared dish and bake for 45 minutes, until the centre is firm and a skewer inserted into the centre comes out clean.

Cool on a wire rack and chill in the fridge for at least 3 hours.

Variation

  • Add 1 tablespoon white, dark and/or milk chocolate chips
