Basic Sweet Pastry

Ingredients
- 1/2 cup plain flour
- 2 teaspoons caster sugar
- Pinch of salt
- 50g cold butter, cut into small cubes
- 4 teaspoons cold water, approximately
Method
Place the flour, sugar, salt and butter into a food processor and process until the mixture resembles breadcrumbs.
Continue to process and gradually add the water until the mixture starts to come together and form large lumps.
Turn out onto a lightly floured surface and knead gently to bring it together. Flatten into a disc and place into a ziplock bag.
Refrigerate for 30 minutes.
Roll pastry between 2 sheets of floured baking paper until large enough to line the relevant dish.
Ease pastry into dish and trim edge. Lightly prick the base with fork, refrigerate for 30 minutes.
Preheat oven to 190oC.
Cover pastry with baking paper, fill with dried beans or rice and place on a baking tray. Bake for 10 minutes. Remove paper and beans and bake for a further 10 minutes until browned. Allow to cool.
