- 1 teaspoon olive oil
- 150g fillet steak
- 1 teaspoon butter
- 2 mushrooms, finely chopped
- 1 clove garlic, crushed
- 1/2 sheet puff pastry
- 1/2 teaspoon wholegrain mustard
- 1 teaspoon melted butter, extra
Preheat oven to 200°C. Line a baking tray with baking paper.
Preheat a small heavy-based frying pan. Brush the steak with oil and season with salt and pepper. Cook for 1 to 2 minutes each side, until just seared. Remove from heat and rest for 2 minutes, covered loosely with foil.
Wipe pan with paper towel and heat butter until frothy. Add the mushrooms and stir fry over medium heat until they have released their juices. Continue to cook until the juices have evaporated, approximately 5-7 minutes in total. Add the garlic and stir until combined and fragrant, approximately 1 minute. Remove from heat.
Place the pastry onto prepared tray. Place the steak in the centre of the pastry, spread with mustard and top with mushroom mixture. Fold up the edges of the pastry to completely enclose the filling. Brush the top with melted butter
Bake for 15 minutes until golden brown.
