Chocolate Lava Pudding

  • 50g 70% cocoa dark chocolate
  • 30g butter, plus extra for greasing
  • 1 egg
  • 2 tablespoons caster sugar
  • 1 tablespoon plain flour


Lightly grease a 200ml ovenproof dish.

Place chocolate and butter in a small heatproof bowl. Sit the bowl over a saucepan of simmering water, ensuring the base of the bowl does not touch the water. Stir until melted and remove from the heat.

Beat the egg and caster sugar in a small bowl until light and fluffy.

Sprinkle the sifted flour over the batter and mix well. Add the chocolate mixture

Spoon the batter into prepared dish and refrigerate for 30 minutes.

Preheat oven to 200oC. Bake for 12 – 15 minutes and wait for 1 minute before turning out onto a plate.


  • Add ½ teaspoon of your favourite liquor

Tips & Hints

You can cook it without refrigerating if you are in a hurry but it is worth the wait. You can also leave in the fridge overnight or freeze, but you will need to cook for an additional 5 minutes.
