- ½ small leek, washed and finely sliced
- 1 tablespoon plain flour
- 20g butter, melted
- ½ cup finely grated gruyere cheese (about 50g)
- 1 egg
- ¼ cup milk
- ¼ cup natural yoghurt
Preheat oven to 170oC.
Gently fry leeks in a little butter until soft, do not brown. Cool slightly
Lightly grease straight sided shallow pie dish (2 cup capacity) or 2 Texas muffin tins.
In a medium bowl mix all ingredients well, pour into dish.
Cook for 25 minutes or until middle is just set.
If making two pies in muffin tins cook for 20 minutes or until just set.
Serve with salad.
Tips & Hints
Trim the leek and discard the tough green top. Slice the leek in half lengthwise and rinse thoroughly to remove any grit between the layers. Finely slice leek.
