Moroccan Mince Parcels

Ingredients
- 1 teaspoon olive oil
- 1 spring onion, sliced
- 100g minced beef
- 25g feta cheese, crumbled
- 1 teaspoon Moroccan seasoning
- 1/4 cup tomato puree
- 2 sheets filo pastry
- 1 tablespoon butter, melted
- 1/2 teaspoon black or white sesame seeds
Method
Preheat oven to 180°C. Line a baking tray with baking paper.
Heat oil in a small saucepan over medium heat. Add spring onion and minced beef and Moroccan seasoning. Cook for 5 minutes until browned. Add the tomato puree and remove from heat. Allow to cool and add the cheese.
Lay out 1 sheet of filo pastry and brush lightly with the melted butter. Top with the other sheet of pastry and fold the pastry in half. Brush edges with more butter.
Spoon the beef mixture along 1 short edge. Fold sides in and roll up. Place onto prepared tray and brush with remaining butter, sprinkle with sesame seeds and bake for 15 – 20 minutes or until golden brown and flaky.
Variation
- Sprinkle top of parcel with extra Moroccan seasoning instead of sesame seeds
