Pear Poached in Spiced Red Wine

  • 1/2 cup red wine
  • 1 tablespoon caster sugar
  • 2 cloves or 1 star anise
  • 1 cinnamon stick
  • 1/2 teaspoon vanilla essence
  • 1 firm ripe pear, peeled and quartered


Combine wine, caster sugar, cloves, cinnamon stick and vanilla essence in a small saucepan. Cook on medium heat until sugar dissolves. Add the pear and bring to the boil.

Cover and reduce heat to a simmer, cook for 1 hour, stirring occasionally until the pear is tender. Remove the pear and place in a small heatproof bowl.

Remove the cinnamon stick and cloves. Increase the heat boil for 5 minutes until the sauce has reduced and is syrupy. Pour over the pear and set aside to cool. Cover and refrigerate for 4 hours to chill.
