- 125g tin sardines in oil
- 1 small potato, peeled and cut into 1 cm batons
- 1/2 onion, thinly sliced
- 1/4 cup milk
Preheat oven to 180oC. Drain sardines, reserving oil.
Place sardines in small ovenproof dish (2 cup capacity).
Place oil in small nonstick frying pan. Add onions and sauté over medium heat until translucent, approximately 5 minutes. Add the potato and sauté a further 5 minutes. Add the milk, increase the heat, and cook for a further 5 minutes until sauce thickens and potatoes start to soften.
Place potato mixture on top of sardines and bake for approximately 20 minutes, until potatoes are soft and golden.
- Replace onion with 1/2 small leek
