- 1 Medium ripe tomato, cut into rough chunks
- 1 tablespoon marinated feta
- 1 teaspoon olive oil
- 1 tablespoon fresh basil, roughly torn
- 2 slices Turkish bread
- 1 clove garlic, peeled
Combine tomato, feta, oil and basil in a small bowl and leave to rest.
Meanwhile, toast the bread on both sides and rub the garlic onto one side. Top with the tomato mixture as season with salt and pepper.
- Add 1 tablespoon chopped kalamata olives
