Half a Jar of Pesto? No Problemo!
So you’ve just made our delicious Pasta with Pesto, Fresh Tomato and Olives easy recipe for one person. And we know you loved it! BUT you still have half a jar of pesto left over. Now you know we don’t like leftover ingredients lingering in the fridge going mouldy and disgusting, and you’re probably not going to want to eat this simple and tasty dish every night – so what should you do with that half a jar of pesto? Grab a bottle of good quality olive oil and cover the remaining pesto, then pop the lid on and stick it in the fridge until you’re ready to use it. Yep – that’s all you have to do. When it’s time to use the pesto, drain and reserve the oil and pour back in the jar until next time. When you are finished with the pesto, you are left with a slightly flavoured olive oil that is prefect for bruschetta!
