Thank Goodness It’s Over!
Don’t get me wrong, I love Christmas. Being surrounded by family and friends, it’s great, but why do I over indulge in just about everything!!! And then people insist on giving me food and drinks as presents. OK its official I am turning into a GOF (Grumpy Old Fart for the uninitiated).
I have had a surfeit of mince pies and Christmas pud, a truckload of turkey, ham and sausage rolls. I have religiously plowed my way through boxes of chocolates, caramels, assorted nuts and dried fruit, not to mention a whole container of Haigh’s dark chocolate shortbread. Yes I did need to greedily eat the whole lot, as anyone who has tried these decadent biscuits will agree – they are just too good to share.
Yes thank goodness it’s over, now I can get back to creating and testing new recipes for solo cooks. Does anyone have a recipe for a single serve Christmas pud or a recipe to rival Haigh’s shortbread they would like me to try for next year?
But for now, maybe I’ll focus on some light meals, like a tasty Greek Salad for dinner tonight, followed by Balsamic Strawberries for dessert. And maybe, just this once, it’s OK to settle on the old cheese sandwich for lunch tomorrow…
